Veggie Noddle Springrolls


This is my Mom’s Recipe.
She make it patiently  for our evening snacks. She is the best cook for me.
Here the secret recipe being Disclosed..
Ingredients.
2 cup Maida
1/4th cup cornflour
½ tsp Baking Powder
Pinch of salt
Pinch of sugar.1/4th cup water
1/4th cup milk.
For the stuffing.
·         1cup of Noodle
·         1/8th cup shredded carrots
·         1/8th cup chopped green beans
·         1/8th cup chopped spring onion
·         1/8th cup thinly shredded cabbage
·         1tbsp Tomato ketchup
·         ½ tsp chillie sauce or hot sauce
·         1tsp chopped Garlic.
For Easy and quick you can use the coleslaw mix available in all stores.
For the Dough::
In a bowl add Maida,cornflour,salt,baking powder.
Mix the water and milk in a container and knead the dough.
Cover the dough with a wet damp cloth for 30 min
Making of the filling:
·         Heat 3 cups of water in a pan add 3 drops of oil and 1/2tsp of salt.
·         To it add the noodles .Let it cook till 80% done.
·         When done strain the water and spread noddles on a plate to cool off.
·         In another hot wok add oil to it add the chopped garlic ,fry for 5 sec than add carrots
·         Followed by beans and cabbage.
·         Fry for 5 min in High flame than add the tomato ketchup and hot sauce followed by Noodles
·         Mix it slowly not to break the noodles. End up with spring onions.
·         Keep it aside to let it cool.
The Making of the spring roll..
·         Divide the dough into 6 parts.
·         Take a ball and roll it into a medium thick circle not too thin to break while stuffing. Put the stuffing in one end than put water on the sides of the rolled dough.
·         Roll it twice and then fold the sides together to the center and continue till u reach the end.
·         At the end add water to act as a glue.
·         Make ready the other balls too.
·         Now fry in hot oil till reddish brown.
·         Serve with ketchup or sauce of your choice

Crunchy Fish Sticks

This Crunchy Fish Sticks are easy to make and fun for kids to eat.
Try it!!
Place the fish on a cutting board. Run your fingers over the fillet to check that all bones are removed.
Then cut them diagonally or straight into 5 pieces, depending on the size of the fillets Keep them Aside.
Ingredients
For the fish stick
1 and half cup all purpose flour
1Tbs dry mustard power.
1Tsp of tomato ketchup, chili sauce, soy sauce
1/4th cup buttermilk
1 Egg
3 cup bread crumbs
½ cup canola oil, divided.
For dipping Sauce
1/4th cup Low fat Mayonnaise
2 tsp lemon juice
2tsp chopped onion
Pinch of salt, pepper
Direction.
In a Large bowl mix flour,mustard ,salt, buttermilk ketchup, chilli sauce, soy sauce and egg.
Coat fish with egg Mixture than breadcrumbs.
Repeat it twice.
In a Flat Pan,heat some oil on medium high,
Put the fish and saute in batches with extra oil if needed. It will take about 5 min.
Turn gently and occasionally.
Meanwhile, in a small bowl, whisk together mayonnaise, lemon juice, chopped onion, salt, pepper.
Stir the mixtures until combined.

Light Fatfree Pinapple Cream Dessert



Ingredients
2 cups vanilla wafer crumbs, divided use
1 Package sugar free instant vanilla pudding mix
1 and half cup cold nonfat milk
1 can crushed pineapple in juice, well drained
¼ cup chopped nuts
1 box fat free whipped topping, thawed.

Directions
v  Place 1 and half cup of Vanilla wafer crumbs in the bottom of a square pan or Pie plate. Set aside
v  In a Large bowl, combine the vanilla pudding mix and cold milk. Whisk until thick for about 2 min.
v  Add the drained Pineapple and spread the mixture over the crumbs in the pan. Top it with nuts.
v  Spread the whipped cream over the pineapple mixture.
v  Place the remaining ½ cup of crumbs on top.
v  Decorate with round cut banana, strawberries and chunks of Mangoes.
v  Refrigerate at least 3 hr before serving
