This is my Mom’s Recipe.
She make it patiently for our evening snacks. She is the best cook for me.
Here the secret recipe being Disclosed..
Ingredients.
2 cup Maida
1/4th cup cornflour
½ tsp Baking Powder
Pinch of salt
Pinch of sugar.1/4th cup water
1/4th cup milk.
For the stuffing.
· 1cup of Noodle
· 1/8th cup shredded carrots
· 1/8th cup chopped green beans
· 1/8th cup chopped spring onion
· 1/8th cup thinly shredded cabbage
· 1tbsp Tomato ketchup
· ½ tsp chillie sauce or hot sauce
· 1tsp chopped Garlic.
For Easy and quick you can use the coleslaw mix available in all stores.
For the Dough::
In a bowl add Maida,cornflour,salt,baking powder.
Mix the water and milk in a container and knead the dough.
Cover the dough with a wet damp cloth for 30 min
· Heat 3 cups of water in a pan add 3 drops of oil and 1/2tsp of salt.
· To it add the noodles .Let it cook till 80% done.
· When done strain the water and spread noddles on a plate to cool off.
· In another hot wok add oil to it add the chopped garlic ,fry for 5 sec than add carrots
· Followed by beans and cabbage.
· Fry for 5 min in High flame than add the tomato ketchup and hot sauce followed by Noodles
· Mix it slowly not to break the noodles. End up with spring onions.
· Keep it aside to let it cool.
The Making of the spring roll..
· Divide the dough into 6 parts.
· Take a ball and roll it into a medium thick circle not too thin to break while stuffing. Put the stuffing in one end than put water on the sides of the rolled dough.
· Roll it twice and then fold the sides together to the center and continue till u reach the end.
· At the end add water to act as a glue.
· Make ready the other balls too.
· Now fry in hot oil till reddish brown.
· Serve with ketchup or sauce of your choice
